Tres leches cake, is a Mexican dessert. The cake take its name because its going to absorb a mix from 3 types of liquids: milks (condensed, evaporated and heavy cream).

6 large eggs (room temperature)
3/4 cups sugar
1 1/4 cups flour (All purpose)
1 1/2 teaspoon baking powder
2 teaspoon vanilla
3 tablespoon vegetable oil

Grease a round baking pan 23 cm diameter or 9 inches. Line with parchment paper.

Preheat the oven to 350 F.  Watch video 

  1. Sift together the flour and baking powder. Set aside.
  2. In an electric mixer, beat the eggs and sugar for at least 5 minutes, until they are thick, pale, and at least doubled in volume. Add the vanilla.
  3. Beat the mix for 11-12 minutes in high velocity until they reach ribbon stage.
  4. Add slowly the flour(sift the flour while you are adding it), fold slowly until combined.
  5. Pour the oil little by little with a very fine and continuous stream, mix until you have a smooth batter.
  6. Pour the batter in the baking pan.
  7. Bake for 30 to 35 minutes or until a skewer inserted into the middle of the cake comes out clean.
  8. Leave the cake to cool in the pan for 10 minutes.
  9. Unmold the cake completely, leave to cool completely on a wire rack.

Make the glaze. Poke the top of the cake all over with a skewer or fork. Pour the glaze over the cake. Refrigerate the cake overnight.
