Tres leches cake, is a Mexican dessert. The cake take its name because its going to absorb a mix from 3 types of liquids: milks (condensed, evaporated and heavy cream).

Ingredients
6 large eggs (room temperature)
3/4 cups sugar
1 1/4 cups flour (All purpose)
1 1/2 teaspoon baking powder
2 teaspoon vanilla
3 tablespoon vegetable oil
Recipe instruction
Grease a round baking pan 23 cm diameter or 9 inches. Line with parchment paper.
Preheat the oven to 350 F. Watch video
- Sift together the flour and baking powder. Set aside.
- In an electric mixer, beat the eggs and sugar for at least 5 minutes, until they are thick, pale, and at least doubled in volume. Add the vanilla.
- Beat the mix for 11-12 minutes in high velocity until they reach ribbon stage.
- Add slowly the flour(sift the flour while you are adding it), fold slowly until combined.
- Pour the oil little by little with a very fine and continuous stream, mix until you have a smooth batter.
- Pour the batter in the baking pan.
- Bake for 30 to 35 minutes or until a skewer inserted into the middle of the cake comes out clean.
- Leave the cake to cool in the pan for 10 minutes.
- Unmold the cake completely, leave to cool completely on a wire rack.
Make the glaze. Poke the top of the cake all over with a skewer or fork. Pour the glaze over the cake. Refrigerate the cake overnight.
