Homemade Gorditas Queretanas
Delicious Gorditas Queretanas filled with migajas and cheese.
What are gorditas? Gorditas are thick corn tortillas that have a pocket in the middle made for stuffing with delicious fillings.
Why are also called "Queretanas"? They were originally created in Queretaro, a Mexico State located at north of the Mexican Capital.
Mixed the flours, add water little by little, mixing well until the dough is moist and does not crumble anymore (it is not necessary use all the water).
The dough is ready when you form a ball, if you push it in the middle the dough is not cracked and you can see your fingers shape in the dough.
Pre-heat the comal, over medium-high heat.
Take a portion of the dough, form a ball the size of a tennis ball and knead forming a hole in the middle, fill with 1 tablespoon of migajas and 1 tablespoon of shredded cheese.
Continue kneading closing it with the help of your palms, being careful not to let the filling come out.
Place the ball on a piece of plastic wrap and flatten it with a tortilla press or your hands until it is 1 centimeter thick. Remove the flattened masa from the plastic wrap and place it on the hot comal.
Cooking time: wait 40 seconds and flip it over, wait 2 minutes to flip it,flip the gordita once or twice every 2 minutes until inflates or bubble up in the middle.
Repeat the same procedure with the rest of the dough.
