Authentic Carnitas Michoacan Style

Delicious pork seasoned as "Carnitas Michoacan Style". The Spanish word carnitas in English means “little meats”. Traditionally, an authentic carnitas recipe is made by braising or simmering pork in lard or oil until tender.
Where do carnitas come from?
This is a dish of Mexican cuisine that originated in the state of Michoacán. Carnitas are made from pork shoulder (pork butt).

Ingredients
4.5 pounds various bits of Pork (see TIPS)
2 pounds Cuero
300 ml cola soda
250 ml milk
300 ml orange juice
4 minced garlic cloves
1 medium onion (in quarters)
2 pounds lard(preferred) or 2 cups of vegetable oil

Recipe instruction
- Fill your pot with the lard and heat it to about 200°F.
- Add pork meat, cook for one hour (approximately). Do not forget to mix continuously, to prevent burn the meat.
- Add cuero.
- Add onion, garlic, orange juice, milk and cola soda. Season with salt. Cook for one hour.
- Carefully transfer pork from lard or oil using a slotted spoon or spider to a serving platter lined with paper towels. Allow meat to cool slightly and shred by hand or using forks.
Serve with hot tortillas,sliced onions, cilantro, limes and salsas of choice.
